I have tried to convert a few Bluray rips to a suitable dvd size and an issue has come up. I find that ConvertX to DVD is adding information...as in a 6gb mkv file becomes an 8.5gb dvd file. Is there some advanced setting in Convertx that would allow me to tweak the bitrate or the audio possibly to remove the extra 100 mb of data? I have tried to convert the file to fit on a dual layer disc as well as a standard dvd... same issue always 100 mb or so over the limit.

Under Settings->Encoding set Encoding quality/speed to High quality/Slow encoding and your disc type to DVD-9. This, I think, will lower the bitrate to make everything fit.
