Does DDR2 run faster in pairs like DDR-400? I have 2GB in at the moment and a friend has offered me a 1GB stick

    If and only If:

    1. The mobo supports dual channel operation
    2. The RAM is capable of dual channel operation
    3. The RAM is properly installed for dual channel operation.

And, even at that, whether or not you will see an appreciable increase in performance is questionable. Some benchmarking tools may report an increase in performance, but I wouldn't expect to see a "night and day-like" change.

3GB is better than 2GB, even if the memory is slower.

as far as i know DDR2 is faster in single Channel, But dual Channel allows more throughput.
