I just checked the Adobe Encore DVD website and it says that it supports closed captions. Does that mean that it supports subtitles???

Subtitles are encoded onto the disc and played through your player, closed captions are what they show on tv shows, and are decoded and displayed by your tv (if it supports closed captions). I'm pretty sure the softwarwe you're talking about does support subtitles though.

subtitles refer to a graphic overlay on the video player handles this

closed captions are placed in the video and decoded from the video stream by a hardware device usually in the tv

teletext is related to closed captioning but is NOT in the DVD spec even for PAL/SECAM Discs
