There is a method using 'Ifoedit' for copying the colours from the original IFO to the new IFO.
It's simple enough - but I find it has problems often as not.

    Run Ifoedit:
'Open' and select the path to the original IFO file

Again, 'Open' and select the path to the new IFO file 'VTS_01_1.IFO'

Both files will be listed in the top window.
You can scroll up and down to select either.

In the top window, choose the file containing the original IFO and highlight 'VTS_PGC_1' under 'VTS_PGCITI'.

In the top menu, click 'Subtitle Color' -> 'Copy Colors from this PGC'

In the top window, choose the file containing the new IFO and highlight 'VTS_PGC_1' under 'VTS_PGCITI'

In the top menu, click 'Subtitle Color' -> 'Paste Colors into this PGC'

Press 'Save' to save the new IFO

    Close IfoEdit

    It might work for you.

I prefer to use 'DVDSubedit' to fix up these problems.
Scroll down to step 8 in this guide.

Or you can use DVDSubEdit to change the colors to whatever you want.
