When i burn a dvdrip to cd or dvd as a data disk to play on my PHILIPS DVP642, how come the sound comes out stereo if the file has AC3 sound which is, i think, the same thing as 5.1 surround sound?

AC3 is just a compression method. It can have from 1 channel upto 5.1 or probably more. Could also be an issue with the way your equipment is set up.
