ok... so I understand that if the movie is in the DVD-9 format I need to "shrink" it to be able to fit the data on ONE DVD-R disk... is it possible to NOT LOSE ANY QUALITY and burn a movie that is greater than 4.36Gb onto TWO DVD-R disks?

Yes it is. You can split the movie either by ripping it to your hard drive, all of it, and using TMPGEnc DVD Auhor, or, if the new DVD2One software supports splitting to two discs, which i heard it did, use it

I am following the guide-lines described here how to shrink the data and burn using Nero (as we speak)... what if I do not shrink the data, and save it on my HDD, then use Nero in the same way? is it possible to choose the files correctly and split the data between two DVD-R's?

You can use dvdtoolbox (dvdfab) to split the movie without quality loss. It just splits the move where you want and creates new ifo files.
