I just converted ten 45 minute avi files onto a 4.7 gb DVD using ConvertX and the quality was the same as if I burned only one.

I was delighted because Ulead Movie Factory's default would only fit one episode and degrade the picture the more I put on it.

Can some-one tell how this is and how much ConvertX will fit on a DVD?

That is VCD quality bitrates, so I would say you have a low idea of what quality is. That said maybe ConvertX is smart enough not to use full DVD resolution for such a low bitrate. Could also be using MPEG-1 (should actually give better quality at low bitrates than MPEG-2). Not sure if ConvertX uses libavcodec for just input or also output, but either way I guess it is using a better quality encoder/settings than Ulead.
