    Wikipedia states that:
High-definition video may be stored on Blu-ray discs with up to 1080p resolution (1920×1080 pixels), at up to 60 frames per second. DVD discs had been limited to a maximum resolution of 480i .

Does this mean that if I download higher quality videos from Youtube (720 and upwards) their quality will be less if burned to a DVD rather than a blu-ray, or would it be difficult to tell?

dvd disk just can't store as much information as a blu-ray disk can. it is same between cd disks & dvd disks. a cd holds 700megs, single layer dvd holds 4.7gigs, a dual layer holds 8.4gigs & a blu-ray holds 25gigs plus.
