My xbox broke a while ago, I had a large amount of halo and halo 2 saves on it that took hours to accumulate. When my xbox broke I opened it, and took out its hard drive. With the rest of it, I packed it with gun powder and blew it sky high in anger, but thats beside the point.

Now I have an xbox 360! I connected the xbox hard drive to my pc and was hoping to be able to get all the save files off of it and put it onto a usb memory device and then put that into my 360 and having all my saves on my new console

I was very angry when I discovered that this wouldnt be as easy as I thought.

I'm sure following through with my plan will be much easier than recreating the saves on the 360, so could anyone tell me how I can extract the saves from the hard drive?

The HD will have to be unlocked to use on pc. If it isn't already unlocked, and you don't have the password or hdkey then you are pretty much out of luck, cause the key is on the motherboard. If you destroyed your mobo and don't have key or pass then it is now a paper weight. If you do still have mobo then it is possible to get key off of eeprom. However it is kinda complicated. Read hdkey from eeprom this link will show you how to build eeprom reader, and use it. If you have key or pass then just use xboxhdmaker to unlock.
