It would depend on why you are Ripping the Movie..Do you Just want to do a Simple DVD Backup of are you doing it so you can Make a DiVx file or a SVCD or VCD Movie...If you just want to Back up a DVD you just click the "Backup" button on the Left side and if you were going to Make a VCD/SVCD or a DiVX File then you not do anything accept choose a place to extract the Files and click Start.....

What Software Would Be Recommended to convert these
extracted VOB files to AVI DIVX Or Mpeg4 Formats After
they have been extracted using the Movie portion of
    Smrat Ripper.

Well The very easiest way would be to First before you Rip the DVD with Smartripper go into the Smartripper settings and under "File Splittion" set it to "Max file Size" and put the max File size to something really high like 9000mb, This will Make it when you rip the DVD in Movie Mode you Rip it to a Single Big Vob file instead of a Bunch of Little Ones..Then all you need to do is Download these 2 Things:
    Virtual-Dub-Mpeg2
    http://fcchandler.home.comcast.net/stable/VirtualDub-MPEG2.zip

    AC3ACM Decompressor
    http://fcchandler.home.comcast.net/AC3ACM/AC3ACM.zip

Install the AC3ACM Decompressor then Run Virtual Dub-Mpeg2 and load in the Vob file and then set the Video and Audio to "Full proscessing mode" then go to "Compression" under Both the audio and Video and choose your Codec and and codec settings Like Bitrate ect, and you can go to "video" to "Filters" and Load in any Filters you want Like maybe you want to Resize to a Different resolution or something, Well after you have done the settings in V-Dub-mpeg2 you just go to "file" to "Save AVI" and give it a Name and Save it, and in a While you will have a AVI file compressed with whatever codec you chose in the compression settings...Cheers
