Well the Format used on DVD"s is Mpeg-2 so what you do is Capture your Files the way you are doing it and then after captureing you use a good Mpeg encoder Like "Tmpgenc" to encode the Captured file to Mpeg-2/DVD and then use a DVD authoring program to add your Menu"s and Chapters and to make the DVD....

There are programs That will capture directly to Mpeg-2/DVD format for you Like "InterVideo WinDVR 3.0" which produces Fairly good quality but you will need to have a Very fast PC like 2.0 to 2.5ghz..

Captureing the Big AVI files and encodeing them to Mpeg-2/DVD will Produce better quality that captureing Directly to Mpeg-2 but it takes Longer...

    Cheers
