One more question, the Rampage Extreme is supposedly "the ultimate overclocking mobo" and I've never overclocked a system and have absolutely no experience. Would this be a good board to start on, or would it be too advanced?

Sounds like a good build to me. I don't like Acer monitors, I would recommend going with Dell or Samsung in favour of them, but hey, your decision on that.
